Sekuwa is meat marinated in mustard oil, timur and hand-ground spice, threaded onto skewers and grilled over open charcoal until the edges blacken. Roadside sekuwa corners from Dharan to Kathmandu build their reputation on the marinade and the fire, fanning the coals as the fat drips and flares. It arrives on a steel plate with beaten rice, raw onion and a lime wedge, and is meant to be eaten standing up while the next batch cooks.

Sel roti is a ring of sweetened rice batter poured in a single confident circle straight into hot oil, emerging crisp and glassy outside and springy within. Bought from a roadside stall the rest of the year, it is the standard partner to a glass of milk tea or a bowl of aloo tarkari.

Sherpa Stew (Shyakpa)

Shyakpa is the one-pot stew of the Sherpa villages of the high Khumbu, built from hand-cut squares of dough, root vegetables and whatever meat is available, usually yak or mutton. Unlike the thin, spicy thukpa, it is thick, mild and filling, designed to put warmth back into people working at altitude. A pot sits on the stove through the evening and everyone eats from it as they come in.

Sikarni is thick yoghurt hung overnight until nearly all the whey drains away, then whipped with sugar, saffron and warm spices into something between a mousse and a cheesecake filling. Widely regarded as a Newar creation from the Kathmandu Valley, it is the traditional closing course of a formal Nepali feast and turns up at weddings, Dashain and Bhai Tika. It needs no cooking at all — only patience while the yoghurt drains.

Suja — known as po cha across the Tibetan plateau — is savoury rather than sweet: strong dark tea churned with butter and salt into a warm, soupy, faintly cheesy brew. Sukuti is meat, usually buffalo or goat, that has been salted, spiced and air-dried into hard strips, then rehydrated and cooked into a chewy, intensely savoury dish. A staple of the Limbu people, who call it sakhekya, it began as a way of carrying protein through mountain winters when fresh meat was scarce. Today it is equally at home as a rice accompaniment or as the standard snack in a bhatti with a glass of raksi.

Swari-haluwa is the old breakfast of Kathmandu: flaky deep-fried wheat rounds served with a glossy semolina pudding heavy with ghee. Rooted in Newar shops around Ason and Indra Chowk, it is sold from steel trays from dawn until the batch runs out, often with a coil of jeri and a bowl of aloo-kerau tarkari to make the full set. It is unapologetically rich, and the whole point is to eat it standing at the counter with hot tea.

Tongba is the signature warm millet brew of the Limbu people of eastern Nepal, and it doubles as the name of the wooden vessel it is served in. Fermented finger millet is packed into the tongba, topped with near-boiling water and sipped through a pierced bamboo straw (pipsing) that filters out the grain, and the same vessel is refilled two or three times as the evening goes on. Offered to guests as a mark of respect and drunk at festivals and in cold weather, it is treated as much as a warming tonic as an intoxicant. Presented here as a cultural and educational overview rather than a step-by-step brewing manual.

Yomari is a steamed rice-flour dumpling pinched into a distinctive fig-like point and filled with molten chaku, the dark cane molasses of the Kathmandu Valley. It belongs to Yomari Punhi, the December full moon that closes the rice harvest, when households steam trays of them as an offering to Annapurna, goddess of grain. The shape is said to echo a flame or a stalk of paddy, and the first bite — hot syrup meeting soft rice dough — is the whole point of the festival.
