Sandheko Wai Wai

वाइवाइ सादेको

Sandheko wai wai takes a packet of instant noodles, crushes it unopened, and tosses the dry pieces raw with its own masala, onion, chilli and lime — no water, no stove. It is the default snack of Nepali student life, made on hostel floors and behind shop counters in about ninety seconds. Street vendors sell a scaled-up version by the bowlful, usually with a spoonful of dalmoth stirred through for extra crunch.

At the stove

Method

  1. Crush the noodles inside their sealed packets with your hands or the flat of a rolling pin until broken into rough, bite-sized shards.

  2. Open the packets and tip the dry noodles into a wide bowl, saving the seasoning and oil sachets.

  3. Add the seasoning powder and the oil sachet and toss so the noodles take on an even, glossy coating.

  4. Fold in the onion, tomato, cucumber and green chillies.

  5. Sprinkle over the chilli powder, timur and chaat masala, then add the mustard oil.

  6. Squeeze in the lime juice and mix everything with a light hand so the noodles stay in distinct pieces.

  7. Stir through the dalmoth or peanuts and most of the coriander at the last second.

  8. Taste before adding any salt — the seasoning sachets are already salty. Scatter over the remaining coriander and eat immediately, while the noodles are still crunchy.
